Ingredients
- 3/4 cup grated cheese
- 1 cup lard
- 1 1/2 cup all-purpose flour
- 3/4 cup potato starch
- 2 eggs
- 2 tsp salt
- to taste nutmeg
- to taste black pepper

Steps
Beat the grated cheese with the lard in the stand mixer’s bowl.
Add the eggs, salt, and spices and beat for a few more minutes.
Finally, add the flour and potato starch and mix for another 2 minutes.
Transfer the mixture to the cookie press and shape the cookies.
Let rest in the fridge for 15 minutes and then bake for 15 minutes at 350°F.
Perfect to serve for appetizers and aperitifs.
