After the success of the Sourdough Discard Crackers, today I decided to try seed crackers, again with Sourdough Discard. Perfect for a quick aperitif, as they don’t require rising and can be prepared in no time. I used poppy and sesame seeds, but feel free to get creative and use different types of seeds.

Ingredients
- 1 1/2 cups all-purpose flour
- 3.5 oz sourdough discard
- 2 tbsp olive oil
- 1 tsp salt
- 1/4 cup water
- to taste sesame seeds
- to taste poppy seeds

- Pastry Wheel

Steps
Pour all the ingredients into the stand mixer and form a soft dough.
Form a ball, and cover it with a bowl. Let it rest for 30 minutes.
Divide the dough into two parts and roll them out very thin with a rolling pin.
Place the dough on a baking tray lined with parchment paper. Poke with a fork and brush with oil. Also, add a bit of salt on top and the seeds.
Using a pastry wheel, cut into small squares and bake at 392°F for about 15 minutes.
