Today I made some soft almond cookies, they are delicious, somewhat like Sardinian Amaretti but different in some ways. They’re really good, and very easy to make. I used the stand mixer but it’s a dough that can easily be made by hand. Super easy with just a few ingredients. If you like almonds, I’ll leave you with other ideas.

Ingredients
- 8.8 oz almonds
- 0.5 cups granulated sugar
- 1 packet vanillin
- 1 whole egg
- 1 tbsp liquor (I used Villacidro giallo)
- zest of 1 lemon
Tools
- Mixer
- Stand Mixer
- Bowl
- Baking Mats silicone
Steps
Chop the almonds in the mixer for a few seconds and transfer them to the bowl of the stand mixer.
Add the rest of the ingredients.
Work with the paddle until the dough comes together. Let rest for 30 minutes in the fridge.
Form into walnut-sized balls and roll them in granulated sugar.
Transfer the cookies onto the silicone mat or onto a baking sheet lined with parchment paper and bake for 15 minutes at 356°F.
Let cool and serve.
