Soft cake with whole mandarins – perfect for a snack

Today I’m making a super easy and especially quick cake. Try the soft cake with whole mandarins and you will fall in love with it just like I did. I used the thermomix, but you can easily use a mixer. To prepare this cake it takes 10 minutes, and you will see the result will surprise you. If you like soft and moist cakes, this cake is for you. Ingredients

  • 3 mandarins
  • 3 eggs
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 packet baking powder

Tools

  • Thermomix
  • Pan 9 inches
  • Spatula silicone

Steps

  • Wash the mandarins and cut them into 4. Remove the seeds.

  • Place the mandarins in the thermomix with the sugar and blend for 20 seconds at speed 10.

  • Add the rest of the ingredients into the thermomix bowl.

  • Blend again for about 20 seconds at speed 5.

  • Pour the mixture into the greased and floured or parchment-lined pan. Bake for about 40 minutes at 350°F.

  • A dusting of powdered sugar and it is perfect for a snack or to end a meal on a sweet note. Fragrant, moist and soft, it will win you over at the first bite.

Variants;

For a lactose-free version, use plant-based milk.

For a gluten-free version, use rice flour with almond flour.

For an extra touch, add chocolate chips, it will be even more delicious.
