Soft Cake with Whole Tangerines – Perfect for Snack Time

Today I’m making a super easy and especially quick cake. Try the soft cake with whole tangerines, and you will fall in love with it just like I did. I used the Bimby, but you can easily use a mixer. It takes 10 minutes to prepare this cake, and you’ll be amazed at the result. If you like soft and moist cakes, this cake is for you. On the blog, you will also find ;

Ingredients

  • 3 tangerines
  • 3 eggs
  • 2 1/3 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/3 cup milk (80 ml)
  • 1/3 cup vegetable oil (80ml)
  • 1 packet baking powder

Tools

  • Bimby
  • Pan 9.5 inches
  • Spatula silicone

Steps

  • Wash the tangerines and cut them into 4. Remove the seeds.

  • Pour the tangerines into the Bimby with the sugar and blend for 20 seconds at speed 10.

  • Add the rest of the ingredients to the Bimby bowl.

  • Blend again for about 20 seconds at speed 5.

  • Pour the mixture into a greased and floured mold or lined with parchment paper. Bake for about 40 minutes at 350°F

  • A sprinkle of powdered sugar and it’s perfect for a snack or to sweetly end a meal. Fragrant, moist, and soft, it will win you over at the first bite.

Variations:

For a lactose-free version, use plant-based milk

For a gluten-free version, use rice flour with almond flour

For an extra touch, add chocolate chips, it will be even more delicious.
