Soft lemon cookies are truly delicious, one leads to another. They are very soft and melt in your mouth. They are really easy to make. I used the Thermomix for convenience, but they can easily be made by hand. The contrast of lemon flavor and powdered sugar on the surface is the extra touch. The Soft chocolate cookies are also very good, one leads to another.

Ingredients
- 7 tbsp butter
- 2/3 cup granulated sugar
- 1 egg
- 1 lemon (zest and juice)
- 2 1/4 cups flour
- 1/2 sachet baking powder
- as needed powdered sugar
- as needed granulated sugar

Steps
Beat the butter with the sugar, add the egg, lemon (zest and juice), and finally combine the sifted flour with baking powder.
Let the dough rest in the fridge for at least an hour. After the hour, take the dough and make balls that we will roll in granulated sugar first and then in powdered sugar.
Arrange them on the baking tray, a little distant from each other and bake at 350°F for about 15 minutes.Insert all ingredients into the Thermomix.
Work for 50 seconds at speed 5.
Let the dough rest for about 30 minutes in the fridge.
Form the balls and pass them first in granulated sugar and then in powdered sugar. Bake for about 15 minutes at 350°F.
