Preparing the soft peach cake is very simple. You just need a bowl and a hand whisk, and of course the peaches, which should be ripe and juicy. You can easily replace peaches with other fruits. The base of this cake is very suitable for other combinations. Good with strawberries or with apples.

Ingredients
- 2 cups all-purpose flour
- 0.5 cup potato starch
- 2 eggs
- 3/4 cup sugar
- 1/3 cup milk
- 1/3 cup vegetable oil
- zest of 1 lemon
- 1 packet baking powder
- 1 pinch salt
- 4 ripe peaches

Steps
In a large bowl, place 1/3 cup of milk, 1/3 cup of oil, the zest of 1 lemon, 3/4 cup of sugar, and the 2 eggs. Mix with the hand whisk for a few minutes.
In a bowl, mix 2 cups of flour with 0.5 cup of potato starch and the packet of baking powder, then add it spoon by spoon to the egg mixture. Continue mixing with the hand whisk until the mixture becomes fluid and without lumps.
Add 2 peaches, washed and peeled, cut into cubes to the mixture and mix again.
Mix carefully.
Transfer the mixture to a 9.5-inch springform pan, greased and floured, and decorate with peach slices, leaving the skin on, and bake for about 40 minutes at 356°F.
