Soft Yogurt Bundt Cake with Bimby

Today for breakfast I prepared the soft yogurt bundt cake. It is really as soft as a cloud and I almost always go for seconds. Dipped in coffee, it is delicious. My daughter Chiara also takes it for a snack at school. I flavored it with lemon zest, but you can easily replace it with orange zest or even vanilla. It’s always good.

Ingredients

  • 1/3 cup vegetable oil
  • 3/4 cup sugar
  • 3 eggs
  • 1 3/4 cups flour
  • 1 packet baking powder
  • zest of 1 lemon
  • 2/3 cup plain natural yogurt

Tools

  • 1 Bowl glass
  • 1 Spatula silicone
  • 1 Bundt Cake Pan
  • 1 Stand Mixer

Steps

  • In the Bimby bowl, pulverize the sugar with the lemon zest for 10 seconds at turbo speed.

  • Add the rest of the ingredients and process for 2 minutes at speed 5.

  • Transfer the mixture into the greased and floured pan and bake for 40 minutes at 356°F.
