Today for breakfast I prepared the soft yogurt bundt cake. It is really as soft as a cloud and I almost always go for seconds. Dipped in coffee, it is delicious. My daughter Chiara also takes it for a snack at school. I flavored it with lemon zest, but you can easily replace it with orange zest or even vanilla. It’s always good.

Ingredients
- 1/3 cup vegetable oil
- 3/4 cup sugar
- 3 eggs
- 1 3/4 cups flour
- 1 packet baking powder
- zest of 1 lemon
- 2/3 cup plain natural yogurt
Tools
- 1 Bowl glass
- 1 Spatula silicone
- 1 Bundt Cake Pan
- 1 Stand Mixer
Steps
In the Bimby bowl, pulverize the sugar with the lemon zest for 10 seconds at turbo speed.
Add the rest of the ingredients and process for 2 minutes at speed 5.
Transfer the mixture into the greased and floured pan and bake for 40 minutes at 356°F.
