Stuffed Bread Dove with Sourdough

Today I made the stuffed bread dove with sourdough. Very soft, perfect for preparing at Easter or Easter Monday. It is very easy to prepare but most importantly, it is delicious and stays soft for days, so it can easily be prepared the day before. I used my Homemade Sourdoughstarter, but it can easily be replaced with yeast. The filling can also be changed according to your tastes. You might also be interested in;

Ingredients

  • 10.5 oz all-purpose flour
  • 10.5 oz re-milled durum wheat semolina
  • 5.3 oz liquid sourdough starter (refreshed and doubled)
  • 1 tsp granulated sugar
  • 1.7 cups water
  • tsps salt
  • 7 oz cheese slices
  • 7 oz salami slices
  • as needed sesame and poppy seeds

Tools

  • Stand Mixer
  • Mixing Bowl
  • 2 Baking Molds dove
  • Rolling Pin

Steps

  • In the Thermomix jug, add all the ingredients and knead for 5 minutes at the dough speed.

  • Transfer onto a floured surface and perform 3 rounds of folds, each 30 minutes apart.

  • Transfer to a bowl, cover with plastic wrap and let it rise until doubled.

  • Transfer again onto the floured surface and divide into 4 parts, form a ball with each part.

  • Roll out each ball with the rolling pin and fill with cheese and salami.

  • Place each part in the dove molds forming first the body.

  • And then the wings

  • Let rise for about 2 hours.

  • Before baking for about 50 minutes at 392°F, spray a little oil on the surface and add the seeds.
