STUFFED VEGETABLES WITH SARDINIAN FREGULA IN AIR FRYER: tasty, light, and super easy

Stuffed vegetables are a classic of Mediterranean cuisine, and today I offer them in an even tastier and more original version: with Sardinian fregula as a filling and cooked in an air fryer! A lighter alternative to traditional cooking, but full of flavor and perfect for summer.
Zucchini, peppers, eggplants, or tomatoes: choose the vegetables you prefer and make every lunch or dinner special!

Stuffed vegetables with Sardinian fregula are a real treat to enjoy in any season. Also perfect for buffets, picnics, or family lunches, they are made with few ingredients and cook in very little time. Try them and let me know if you loved them as much as I did!

Ingredients

  • 1 eggplant
  • 2 peppers
  • 5.3 oz Sardinian fregula
  • to taste chopped garlic and parsley
  • 1 large ripe tomato diced
  • 2 tbsp pesto
  • 3.5 oz shredded pizza mozzarella

  • Air Fryer
  • Saucepan

Steps

  • Cook the vegetables in the air fryer for about 10 minutes at 392°F

  • Meanwhile, boil the Sardinian fregula in plenty of salted water, for the time indicated on the package.

  • When the fregula is cooked, drain it into a bowl and cool it with a drizzle of oil.

  • Add chopped garlic and parsley, diced tomatoes, pesto, and mozzarella to the fregula and mix. Also add the vegetable pulp (in my case, only from the eggplants).

  • Fill the vegetables with the seasoned fregula, spray a bit of oil on top, add some mozzarella, and gratin in the air fryer for 5 minutes.

  • Transfer to a serving dish and enjoy!!
