How much do we chatter at Carnival? Carnival is the time when we fry the most, so I couldn’t miss out on having the chatters on my blog. Super bubbly and super crunchy. Just the way I like them. My chatters are, in fact, super thin and crunchy. It’s inevitable not to get messy. To prepare the chatters, I used the Bimby, but you can easily knead by hand. The dough is very easy. Ingredients
- 2 cups all-purpose flour
- 2 cups Manitoba flour
- 1/2 cup lard
- 2 tbsps sugar
- 2 whole eggs
- zest of 1 lemon
- 1 pinch salt
- 1/2 cup white wine
- powdered sugar (for sprinkling)
- seed oil (for frying)

Steps
I put the sugar, a few tablespoons of flour, and the lemon peel peeled with a peeler into the Bimby and blended at speed 9 for a few seconds.
I added all the other ingredients.
I let it work for 3 minutes at kneading speed.
I wrapped the dough with plastic wrap and let it rest for about 1 hour in the fridge.
After resting, I rolled out small pieces of dough with the pasta machine. Make them very thin.
With the pastry cutter, I formed the chatters and let them rest for 10 minutes.
I then fried them in hot oil for about 5 minutes. The ideal oil temperature is around 340°F/355°F. Transfer to paper towels.
Sprinkle with powdered sugar before serving.
Pour all the ingredients, except the wine, into a bowl and start kneading, slowly adding the wine. Form a ball and proceed as described above.
Pour all the ingredients, except the wine, into the stand mixer’s bowl. Use the paddle for this dough. Start mixing and slowly add the wine. When the dough detaches from the sides, it is ready. Remove it from the bowl, form a ball and wrap it with plastic wrap. Then proceed as described above.
