Super Crunchy Chocolate Carnival Fritters

Today I made fritters again, but this time instead of powdered sugar like in the Crunchy Carnival Fritters, I decided to enrich them with melted dark chocolate. Super delicious, you can’t stop at just one. The preparation is very simple, I always use the same recipe for Fritters because it’s fabulous, light, and crispy, and now it’s well-tested. So if you still don’t have a favorite fritter recipe, I gladly share mine.

Ingredients

  • 4 cups flour (half all-purpose, half Manitoba)
  • 1/2 cup lard
  • 2 tbsp granulated sugar
  • 2 whole eggs
  • zest of 1 lemon
  • 1 pinch salt
  • 1/2 cup white wine (add just a little more if needed)
  • vegetable oil (for frying)
  • melted dark chocolate (for garnishing)

Tools

  • Stand Mixer
  • Pasta Roller
  • Pastry Wheel
  • Frying Pan

Steps

  • Place the lemon zest, sugar, and a few tablespoons of flour in the Thermomix jug. Pulverize at speed 9 for a few seconds.

  • Add the rest of the ingredients and mix at kneading speed for 3 minutes.

  • Add a little more wine if needed.

  • Form a ball, wrap it in plastic wrap, and let it rest in the fridge for 1 hour.

  • Then roll out small portions of the dough very thinly with the pasta roller or rolling pin.

  • Cut the fritters with the pastry wheel and let them rest for 10 minutes.

  • Fry them in hot oil.

  • Drain them on paper towels and let them cool. Then cover with melted dark chocolate.

  • Let the chocolate set and serve.

  • Pour all ingredients, except the wine, into the stand mixer’s bowl. Use the paddle for this dough. Start mixing and gradually add the wine. When the dough detaches from the sides, it is ready. Remove it from the bowl, form a ball and wrap it with plastic wrap. Then proceed as described above.
