Tasty Quail in Casserole

Today I prepared quail in a casserole. We usually prepare them roasted, but I must say that, despite it being my first time, they are really tasty.

Preparing quail in a casserole is really simple and the cooking is quite fast. I used the spices and herbs I had at home, but you can easily use the ones you like the most.

Ingredients

  • 5 quail
  • 2 carrots
  • 1/2 onion
  • 2 stalks celery
  • to taste olive oil
  • to taste fine salt
  • 2 leaves bay leaf
  • 1 pinch rosemary
  • 1 pinch thyme
  • 4 leaves sage
  • 3 cloves minced garlic
  • 2 bunches chopped parsley
  • 1 glass wine (for deglazing)

Steps

  • The first thing to do is to chop the carrots with the celery and onion.

  • In a wide casserole with low edges, I poured the olive oil and slightly sautéed the minced garlic and parsley, and the chopped carrot, onion, and celery.

  • After a few minutes, I also added the other herbs. I slightly sautéed and added the quail.

  • After about 10 minutes, I poured the wine over the quail and continued cooking for about 30 minutes.

  • Delicious!!
