Today I prepared quail in a casserole. We usually prepare them roasted, but I must say that, despite it being my first time, they are really tasty.
Preparing quail in a casserole is really simple and the cooking is quite fast. I used the spices and herbs I had at home, but you can easily use the ones you like the most.

Ingredients
- 5 quail
- 2 carrots
- 1/2 onion
- 2 stalks celery
- to taste olive oil
- to taste fine salt
- 2 leaves bay leaf
- 1 pinch rosemary
- 1 pinch thyme
- 4 leaves sage
- 3 cloves minced garlic
- 2 bunches chopped parsley
- 1 glass wine (for deglazing)

Steps
The first thing to do is to chop the carrots with the celery and onion.
In a wide casserole with low edges, I poured the olive oil and slightly sautéed the minced garlic and parsley, and the chopped carrot, onion, and celery.
After a few minutes, I also added the other herbs. I slightly sautéed and added the quail.
After about 10 minutes, I poured the wine over the quail and continued cooking for about 30 minutes.
