The thousand bubbles focaccia is one of my favorite recipes. It’s delicious both eaten plain or stuffed. I also love eating it warm.
The thousand bubbles focaccia is very simple to prepare and you can easily make it by hand or with a stand mixer.
I stuffed it with cherry tomatoes, but it’s also delicious with olives, onions, or simply with rosemary, just as you like it!!!

Ingredients
- 4 cups all-purpose flour
- 1 ⅔ cups water
- 1 tbsp salt
- 0.35 oz fresh yeast
- 3 tbsp extra virgin olive oil
- to taste aromatic salt
- 1.1 lbs cherry tomatoes
- to taste extra virgin olive oil

Steps
In a glass bowl dissolve the yeast in the water with the sugar.
Add the flour and salt and mix with a spatula.
Let rest for 10 minutes.
After the 10-minute rest, add the oil and mix until all the oil is absorbed.
Perform 3 rounds of folding every 15 minutes with the spatula, bringing the dough edges to the center. Let rise until doubled.
Generously oil a baking pan, deflate the dough by doing another round of folding with the spatula. Pour the dough into the pan and let rest for about 1 hour
Make the classic dimples with your fingers.
Separately prepare the cherry tomatoes, cut them into quarters and season them with oil, salt, and oregano.
Dress the focaccia with cherry tomatoes and their juice.
Bake at 392°F for about 30 minutes.
