Hello everyone, today I am sharing the basic recipe for whipped shortcrust cookies. I’ve been wanting to try out my electric cookie press that I got from Lidl some time ago, and today I decided to go for it. This is the basic recipe, so it’s vanilla flavored. You can easily flavor it with orange or lemon. You can also substitute part of the flour and make them with cocoa.
Whipped shortcrust cookies are delicious, they melt in your mouth and are very crumbly due to the generous amount of butter.

Ingredients
- 9 oz soft butter (or half with lard)
- 1 cup powdered sugar
- 1 egg
- 1 tsp vanilla extract
- 1 pinch salt
- 3 cups flour

Steps
Place the soft butter and sugar in a bowl and use electric whisks to mix until the mixture is well whipped and frothy.
Add the egg, vanilla extract, and salt, and continue to whip.
Finally, add the flour and continue with the electric whisks until you achieve a homogeneous, lump-free dough.
Transfer some of the mixture into the cookie press and form the cookies. Remember not to grease the pan you will use.
Bake for about 10/15 minutes at 356°F. They should be slightly golden.
