- 1 zucchini
- 1 eggplant

- 9 oz linguine

- 2 tbsps grated cheese

Steps
Wash the vegetables, dice them and sauté with oil and salt until soft.
Meanwhile, boil the linguine in plenty of salted water for the time indicated on the package.
In a bowl, mix the egg with the grated cheese.
When the linguine is cooked, add it to the vegetables and mix. Add the egg with the cheese and continue to mix.
Garnish with fresh basil and serve.
If you like, you can add a pinch of pepper to the beaten egg with cheese.
