What better season to prepare stuffed vegetables? Today, given the abundant season, I prepared stuffed eggplants, zucchinis, and peppers. Cooked in an air fryer. With this heat, it’s very convenient, plus it saves me time, so even better. I steamed the zucchinis and eggplants for a few minutes in the microwave.

Ingredients
- 7 oz cherry tomatoes
- 7 oz fresh sausage
- 7 oz mozzarella for pizza
- to taste olive oil
- to taste fine salt
- 1 zucchini
- 1 eggplant
- 1 pepper

Steps
In a large bowl, place 7 oz of washed and chopped cherry tomatoes, 7 oz of sausage, and 7 oz of diced mozzarella. Mix well.
Separately, wash and clean the vegetables and cut them in half. Steam the zucchini and eggplant. I preferred microwave steaming. Add the inside of the eggplant and zucchini to the sausage mixture.
Mix well, add a drizzle of olive oil, and fill the vegetables with the mixture.
Place the vegetables on the air fryer basket and cook at 392°F for about 20 minutes.
