Christmas is approaching, and thinking about the table I will prepare, I thought of making a beautiful whole wheat bread crown with sourdough. Beautiful to place at the center of the table with other types of bread like Semolina Breadsticks with Sourdough or Bread Swirls. I’m sure the effect will be really nice. Of course, it can be made with any type of flour.
Making the whole wheat bread crown with sourdough is very simple. And don’t worry if you don’t have Homemade Sourdough, I will give you instructions on how to use brewer’s yeast.

Ingredients
- 2.5 cups whole wheat flour
- 1.5 cups all-purpose flour
- 1.5 cups water
- 5 oz sourdough starter
- 1 tbsp salt

Steps
In the stand mixer, dissolve the sourdough starter in the water. The same applies if working in a bowl. At this stage, you can use the paddle attachment.
Add the flours and mix for about 10 minutes. If working in a bowl, make sure the flour absorbs all the water. Now replace the paddle with the dough hook.
Add the salt and knead for another 15 minutes.
Transfer the dough to a work surface, form a ball, place it in a bowl, and let it rise until doubled in size.
Once risen, transfer the dough to the work surface. Gently stretch it with your hands and form a hole in the center. Place the resulting ring on a bundt pan lined with a cloth dusted with flour.
Cover and let it rise for another hour or so until it rises a bit. Transfer to a pan and with the help of a sharp blade, make cuts on the surface. I tried to make leaves but I’m not very good at it. Bake at 482°F for about 30 minutes, then another 20 minutes at 392°F.

If desired, you can replace the whole wheat flour with re-milled semolina.
