Today I made the zucchini flatbread, perfect for snacking as an appetizer or aperitif. The zucchini flatbread is very easy to prepare. Easy and quick, the zucchini flatbread will win you over at the first bite. It is made in 5 minutes with very few and simple ingredients. Ingredients
- 10.5 oz zucchini
- 7 oz water
- 1.25 cups flour
- 2 tbsps grated cheese (plus extra for topping)
- 2 tbsps olive oil
- to taste salt
- 1 pinch pepper
- 1 pinch nutmeg

Steps
In a large bowl, mix the flour with water, grated cheese, oil, salt, and spices. A smooth batter without lumps should form.
Add the thinly sliced zucchini; I used the mandoline. Mix well with the help of a spatula.
Transfer the mixture onto a baking pan lined with slightly oiled parchment paper. Form a thin layer. Add a drizzle of oil on top and grated cheese.
Bake for about 20 minutes at 392°F (convection mode).
Cut into pieces and serve. Good even when cold.
