Ingredients for Baked Breaded Pumpkin
- 1.21 lbs pumpkin (weighed without skin)
- 2 eggs
- 3/4 cup breadcrumbs
- 4 tbsps extra virgin olive oil
- 1/4 tsp salt

Preparation of the Baked Breaded Pumpkin
Clean the pumpkin from the skin, wash it and dry it well, slice it into slices about 0.4 inches thick (thicker slices are fine too, it cooks quickly anyway).
In a bowl, beat the eggs with a pinch of salt and prepare the breadcrumbs, always mixing with a pinch of salt. You can place the breadcrumbs on parchment paper, so once done, you can throw it away and not wash anything).
Dip the pumpkin slices first in the egg, then in the breadcrumbs and place them on a baking sheet with parchment paper.
Heat the oven to the maximum temperature, drizzle the oil over them, and bake for 20 minutes (there’s no need to turn the pumpkin slices).
Once the breaded pumpkin is cooked, remove it from the oven and serve it with freshly ground pepper if you like, and/or fresh parsley if you prefer. It is excellent both hot and cold, enjoy your meal!
