Baked Gratin Radicchio, Easy Recipe!

Ingredients for Gratin Radicchio

  • 1 head of round radicchio
  • 1/2 cup of breadcrumbs
  • 1 pinch of sugar (this is the tip to remove some bitterness)
  • 1 pinch of fine salt
  • 1 to taste of mixed peppercorns (freshly ground and to your taste)
  • 3 tablespoons of extra virgin olive oil

Preparation of Gratin Radicchio

  • Cut the radicchio into thick slices, then cut it again into coarse pieces.

  • Place the chopped radicchio in a bowl and rinse it under running water, drain well.

  • Now season it with salt, sugar, and pepper and mix well.

  • Line the baking pan with parchment paper and pour in the seasoned radicchio.

  • Season the breadcrumbs with a pinch of salt and sprinkle it over the radicchio, then drizzle with oil.

  • Bake in a preheated oven at 400°F and cook for 40 minutes, once cooked let it cool slightly and serve! Enjoy your meal!

USEFUL TIPS

You can prepare the gratin radicchio in advance and heat it up when needed, you can add chopped walnuts to the breadcrumbs, or raisins or apple pieces to the radicchio; to make it more appetizing, you can add bacon or speck pieces!
