Ingredients for Baked Mozzarella in Carrozza
- 2 mozzarellas (each 4.4 oz)
- 8 slices sandwich bread
- 3 eggs
- 1 teaspoon sweet paprika (powdered)
- 1 teaspoon rosemary
- 3 tablespoons extra virgin olive oil
- as needed breadcrumbs (I used about 2.5 oz)
- as needed fine salt
Preparation of Baked Mozzarella in Carrozza
Drain the mozzarellas and pat them dry with kitchen paper, cut them in half and leave them out to air while you prepare the other ingredients.
In a bowl, beat the eggs with a pinch of salt; in another bowl, mix the breadcrumbs with paprika, rosemary, and a pinch of salt.
Place each half mozzarella in the center of a slice of sandwich bread, cover with another slice and press the edges well to form a sort of closed sandwich (until you finish mozzarella and bread).
Dip each sandwich one at a time first in the egg, then in the breadcrumbs, again in the egg and again in the breadcrumbs, pressing well each time to adhere the coating, especially on the edges.
Place the mozzarella in carrozza in a baking dish lined with parchment paper and drizzle the olive oil on top, preheat the oven to 392°F and once hot, bake.
