Baked Mozzarella in Carrozza

Ingredients for Baked Mozzarella in Carrozza

  • 2 mozzarellas (each 125 g (4.4 oz))
  • 8 slices white bread
  • 3 eggs
  • 1 teaspoon sweet paprika (powder)
  • 1 teaspoon rosemary
  • 3 tablespoons extra virgin olive oil
  • as needed breadcrumbs (I used about 70 g (2.5 oz))
  • as needed fine salt

Preparation of Baked Mozzarella in Carrozza

  • Drain the mozzarellas and pat them dry with paper towels, cut them in half and leave them to air dry while you prepare the other ingredients.

  • In a bowl, beat the eggs with a pinch of salt, in another bowl mix the breadcrumbs with paprika, rosemary, and a pinch of salt.

  • Place each half mozzarella in the center of a slice of white bread, cover with another slice of white bread and press the edges well to form a closed sandwich (continue until mozzarella and white bread are finished).

  • Dip each sandwich, one at a time, first in the egg, then in the breadcrumbs, again in the egg, and again in the breadcrumbs, pressing firmly each time to make sure the coating sticks, especially on the edges.

  • Place the mozzarella in carrozza on a baking tray with parchment paper and distribute the oil on top, heat the oven to 200°F (390°F) and once hot, bake.

  • Bake the mozzarella in carrozza in the oven for 20 minutes, turning it halfway through, then remove and enjoy! If you like, garnish with fresh parsley before serving and enjoy your meal!
