Ingredients for Baked Potatoes and Sausage
- 2.86 lbs potatoes (weight after peeling)
- 21.16 oz sausages
- 5 cloves red garlic
- to taste extra virgin olive oil (generous amount)
- 1 tbsp rosemary (fresh or dried)
- 1 pinch fine salt
- 16 cups water (to soak the potatoes before cooking)

Preparation of the Baked Potatoes and Sausage Recipe
Start by peeling the potatoes, washing them well, and cutting them into large chunks. Then place them in a bowl and cover with cold water (tap water is fine), leaving them to rest like this for 15 minutes.
After 15 minutes, drain the potatoes well, pat them dry with paper towels, and dry them thoroughly (keeping them in the bowl). Season them with plenty of oil (4/5 tablespoons), rosemary, salt, and peeled garlic cloves. Mix well with two spoons and spread them out well on a baking tray.
Preheat the oven to 482°F, and once it’s at temperature, bake for 30 minutes without stirring.
While the potatoes are cooking, remove the skin from the sausages and cut them into large chunks (I divided each sausage into 3 parts) and leave them in the bowl where you seasoned the potatoes so they take up the leftover seasoning.
After the first 30 minutes of cooking the potatoes, take out the tray, add the sausage, mix gently, and put them back to cook for another 30 minutes. Once cooked, turn off the oven and serve the baked potatoes with sausage hot and steaming!
