Ingredients for Baked Tofu in Foil
- 8.8 oz tofu
- 10.6 oz yellow bell pepper (weight after cleaning)
- 3.5 oz black olives (seasoned)
- 7 oz cherry tomatoes
- 1 tsp dried onion
- 1 tsp rosemary
- 1 tsp chives (dried)
- 1/2 tsp garlic powder
- to taste pepper (freshly ground)
- to taste salt
- 3 tbsps extra virgin olive oil

Preparation of Baked Tofu in Foil
Drain the tofu of any preserving liquid then pat it dry with a paper towel, cut it into cubes, and place them in a bowl.
Add to the bowl the yellow bell pepper (cleaned and chopped into pieces), olives, cherry tomatoes, all the herbs, salt, pepper, and oil, mix well.
Place a sheet of parchment paper in the baking tray, pour in the seasoned tofu and close the package with kitchen twine, leaving just a small opening at the center of the foil.
Preheat the oven to 482°F, and when it’s hot, bake the seasoned tofu, cook for 20 minutes, then turn off the oven, let it cool slightly, and serve. It’s also excellent cold! Enjoy your meal and your vegan guests!
