Baked Zucchini Casserole

I don’t know about you, but I adore zucchini, I often cook them in many different ways, I like to vary, and today I’m sharing this baked zucchini casserole, delicious and cheesy, great both hot and cold, perfect to prepare in advance. Once cooled, you can store it in the fridge covered with plastic wrap for 2-3 days. You can serve the zucchini casserole as a main dish or as an appetizer by cutting it into small cubes! Ingredients for the Baked Zucchini Casserole

  • 21 oz zucchini
  • 4 eggs (XL size)
  • 7 oz cow milk ricotta
  • 3/4 cup all-purpose flour
  • 3 oz Grana Padano cheese, grated
  • 7 oz provolone cheese (in a single piece to be cut into cubes)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp breadcrumbs
  • to taste salt
  • to taste pepper (freshly ground)

Preparation of the Zucchini Casserole

  • Clean, wash, and dry the zucchini, then grate them into a bowl, add the eggs and ricotta, and mix well.

  • Then add the grated cheese, flour, 2 tablespoons of oil, salt, and pepper to taste (according to your preference) and mix again until all ingredients are combined.

  • Cut the piece of provolone into cubes, add them to the bowl, and mix to combine them well with the mixture.

  • Preheat the oven to 482°F, in the meantime, pour the mixture into the non-stick baking pan, level it, sprinkle the surface with breadcrumbs, a pinch of salt, and pour the remaining tablespoon of oil.

  • When the oven is hot, bake and cook for 40 minutes. At the end of cooking, the surface of the zucchini casserole should be golden brown! Once baked, remove from the oven and serve, great both hot and cold, enjoy your meal! If you like, add some fresh basil leaves before serving.
