I like to vary, and today I’m sharing this tasty and stringy baked zucchini casserole, delicious both hot and cold, perfect to prepare in advance. Once cooled, you can store it in the fridge covered with food wrap for 2/3 days. You can serve the zucchini casserole as a main dish or as an appetizer by cutting it into small cubes! Ingredients for the Baked Zucchini Casserole
- 21.2 oz zucchinis
- 4 eggs (XL size)
- 7.1 oz cow's ricotta
- 3/4 cup all-purpose flour
- 3.2 oz Grana Padano, grated
- 7.1 oz provolone (in a single slice to be cut into cubes)
- 3 tbsps extra virgin olive oil
- 2 tbsps breadcrumbs
- to taste salt
- to taste pepper (freshly ground)

Preparation of the Zucchini Casserole
Clean, wash and dry the zucchinis, then grate them into a bowl, add the eggs and ricotta, and mix well.
Then add the grated cheese, flour, 2 tablespoons of oil, salt, and pepper to taste (according to your preferences) and mix again until all ingredients are combined.
Cut the slice of provolone into cubes, pour them into the bowl, and mix them well into the mixture.
Preheat the oven to 480°F, in the meantime pour the obtained mixture into the non-stick baking pan, level it, sprinkle the surface with breadcrumbs, a pinch of salt, and the remaining tablespoon of oil.
When the oven is well-heated, bake and cook for 40 minutes, at the end of cooking, the surface of the zucchini casserole should be well browned! Once cooked, remove it from the oven and serve, excellent both hot and cold, enjoy your meal! If you like, add some fresh basil leaves before serving.
