Preparation of the pesto without garlic or cheese
To start, wash the basil leaves well and wrap them in paper towels for 5 minutes to dry them very well. Meanwhile, proceed with the next steps.
Weigh cashews, almonds, pine nuts, salt, and oil. Add everything to a jar or bowl, then finally add the well-patted and dry basil.
Now blend everything with the immersion blender for about 3 minutes, then mix with a spoon and pour all the basil sauce into a plastic cup (or another small freezer-safe container).
Cover the cup with the basil pesto with plastic wrap (or a freezer bag) in contact with the sauce, place in the freezer, and consume within 15-20 days, in the next step on how to consume it.
To consume the basil pesto without garlic and cheese, if you need to use a small amount, simply take the quantity you need with a teaspoon. If it hardens too much (this may happen in chest freezers), let it sit at room temperature for 2 minutes and take the part you need, then put it back in the freezer. If you need to use it all, you can take it out 10 minutes before use and proceed as if it were fresh.

Notes
The amount might seem small, but I assure you the flavor is very concentrated, and that’s why one heaping teaspoon per person is enough to season pasta. Besides pasta, it pairs perfectly with boiled meat and fish, boiled potatoes, or soups and stews.
