Ingredients for Cooking Simple Boiled Artichokes

  • 6 artichokes
  • 8 1/2 cups water (to boil them)
  • 1 teaspoon coarse salt
  • 1 tablespoon extra virgin olive oil
  • 12 3/4 cups water
  • 2 tablespoons lemon juice
  • 1/2 glass white wine
  • to taste parsley (fresh)
  • to taste red garlic

Preparation for Simple Boiled Artichokes Recipe

  • First, you need to clean the artichokes, here’s how to do it. Start by wearing surgical gloves if you don’t want your hands to turn black, and you won’t have any problems.

  • Start by cutting the stem from the head of the artichoke. To clean the head, do this: cut a few inches off the tips of the leaves (you need to cut until the leaf tips are no longer visible), then remove all the tough outer leaves until you reach the heart of the artichoke.

  • Cut each artichoke head into 4 wedges (or 6 if they are very large) and soak them in a previously prepared basin with water and lemon (this prevents the artichokes from turning black).

  • To clean the stems (which are delicious and should not be thrown away!), do this: remove all the tough outer fibers (similar to cleaning cardoons), cut them into pieces about 4 inches long, and divide each piece in half or into quarters (depending on size). Submerge them in the basin with water and lemon and voilà, the artichokes are now all cleaned and ready to be cooked!

  • Prepare a large pot so that all the artichokes (and their cleaned stems) fit comfortably. Cover with plenty of water, add the teaspoon of coarse salt, and turn the burner to high heat.

  • Once it boils, cook the artichokes for about 20/30 minutes (better to boil a few minutes more than less). To check if they’re done, a trick is to poke them with a fork or the tip of a knife. If it goes in easily, they’re ready!

  • Once the boiled artichokes are cooked, drain them and season with a drizzle of olive oil, a pinch of salt, and freshly chopped parsley (also pepper if you like). Voilà, you have a super tasty side dish ready in no time, or a great base to start preparing other delights.

Tips and Variations

Once the simple boiled artichokes recipe is ready, you can eat them simply seasoned with oil and salt, or if you like, you can sauté them in a pan for 8/10 minutes adding 1/2 glass of white wine, a clove of garlic, and some parsley. They will be super flavorful!

You can also enrich them with diced and browned bacon.
