  • 3/8 cup sugar
  • 3/8 cup milk
  • 3 tablespoons butter

  • To start, put the butter in the saucepan and melt it, turn off the heat, and let it cool.

  • In a bowl, pour the milk and instant coffee, mix quickly, then add eggs and sugar, mixing well to combine all the ingredients.

  • Add the butter, now cool, and incorporate it into the rest of the mixture.

  • In a separate bowl, sift together the flour and baking powder, add them to the bowl of liquid mixture, and with the help of a spoon, mix until you get a lump-free and very thick batter.

  • Butter and flour the muffin pan, using 2 spoons, pour 1 and a half tablespoons of batter into each mold (makes 10 medium-sized muffins).

  • Preheat the oven to 428°F and once it’s hot, bake and cook for 25 minutes, once cooked, remove them from the oven and let them cool before removing them from the mold, always perform the toothpick test before the end of cooking.
