Ingredients for the chocolate and banana cake
- 2 1/2 cups all-purpose flour
- 2 eggs
- 3/4 cup sugar
- 1 cup bananas (weighed without peel)
- 2/3 cup dark chocolate chips
- 1/2 cup lactose-free milk
- 7 tbsp extra virgin olive oil
- 1/2 packet baking powder
- 1 tsp powdered sugar

Steps to make the chocolate and banana cake
In a bowl, pour: the eggs, sugar, milk, and oil and mix until you obtain a frothy mixture.
In a separate bowl, mix the flour with the baking powder.
Add the flour and baking powder mixture to the egg bowl, sifting it through a sieve and stirring gradually.
Mix until you obtain a moderately thick and homogeneous batter without lumps.
Slice the bananas, place them in a bowl (the same one where you mixed the flour and baking powder is fine) and lightly flour them.
Add now to the previously prepared batter and mix until well combined.
Lightly oil and flour the baking pan, pour the batter, and level it with a spoon.
Preheat the oven (electric in static mode) to 482°F and bake for 45 minutes. Towards the end of baking, always do the toothpick test because every oven is different. When the cake is done, let it cool in the open and off oven.
Once cooled, remove it from the pan, sprinkle with powdered sugar, slice, and enjoy! Bon appetit!
Advice
You can enjoy the cake as it is or use it as a base to fill, or you can simply garnish it with whipped cream.
If you like, you can add a handful of nuts or raisins to the batter.
