Christmas Bread Ring

Christmas bread ring, a perfect bread to serve during the Christmas holidays, also great as a centerpiece, a ring made of many small rolls, each guest can take their own roll, decorated with mixed seeds it will be a pleasure to see as well as taste! So now hurry up and start kneading!

Ingredients

  • 3/4 cup low glycemic flour
  • 3 cups Manitoba flour
  • 1 tsp dry yeast
  • 3.5 tbsp extra virgin olive oil
  • 1 tsp fine salt
  • 1 1/3 cups water
  • as needed milk
  • as needed poppy seeds
  • as needed sesame seeds

Preparation of the Christmas Bread Ring

  • Pour the ingredients into the bowl of the stand mixer in this order: flours, salt, and mix quickly with a spoon, then add the yeast, water, and oil, attach the dough hook and knead at speed 2 for 5 minutes, then turn off and let it rest covered with a cloth for 5 minutes.

  • After the rest period, start the stand mixer again at speed 2 for another 5 minutes, then turn off and transfer the dough to the work surface, shape it into a ball (use a bit of flour if needed) and place it in a glass bowl covered with cling film, transfer the bowl to the closed and switched-off oven to rise until doubled (about 5 hours depending on external temperatures).

  • Once the dough has doubled, take it back, flour the work surface, and divide the dough into 10 equal parts, shape each part into a ball and place the 10 balls in the ring mold slightly apart, put it back in the closed and switched-off oven to double in volume (it will take about 1/2 hours).

  • Once the balls have doubled and formed an attached ring, remove the mold from the oven, preheat to 482°F and while it is heating up, proceed to decorate the bread.

  • Brush the surface of the ring with some milk, sprinkle with sesame seeds on one ball and poppy seeds on another, when the oven is hot, bake the ring and cook for 40/45 minutes, (please always check the cooking towards the end because every oven is different, mine cooks with these times and temperatures).

  • Once the Christmas bread ring is baked, remove it from the oven, let it cool completely and when it is cold, decorate it before bringing it to the table and enjoy!

Notes

If you want to knead by hand instead of with the stand mixer, you can do it, just make sure to follow the order of ingredients insertion before starting to knead.
