Ingredients
- 3/4 cup low glycemic index flour
- 3 1/4 cups Manitoba flour
- 2 tsp dry yeast
- 3 1/2 tbsp extra virgin olive oil
- 1 tsp fine salt
- 1 1/3 cups water

Preparation of the Christmas Bread Ring
Pour the ingredients into the bowl of the stand mixer in this order: the flours, the salt, and mix quickly with a spoon, then add the yeast, water, and oil, attach the dough hook and let it run at speed 2 for 5 minutes, then turn off, let it rest covered with a towel for 5 minutes.
After resting, turn the mixer on again at speed 2 for another 5 minutes, then turn off and transfer the dough to the work surface, shape it into a ball (use some flour if needed) and place it in a glass bowl covered with plastic wrap, transfer the bowl into the closed and turned off oven to rise until doubled (about 5 hours depending on external temperatures).
Once the dough has doubled, take it back, flour the work surface and divide the dough into 10 equal parts, form a ball with each part and place the 10 balls in the bundt pan slightly spaced from each other, put back in the closed and turned off oven to double in volume (it will take about 1/2 hour).
Once the balls have doubled and formed an attached ring, take the pan out of the oven, turn it on to 482°F and while it heats up, proceed to decorate the bread.
Brush the surface of the ring with some milk, sprinkle sesame seeds on one ball and poppy seeds on another, when the oven is very hot, put the bread ring in and bake for 40/45 minutes, (always check the baking towards the end because every oven is different, mine bakes with these times and temperatures).
Once the Christmas bread ring is cooked, take it out of the oven, let it cool completely, and when it is cold decorate it before bringing it to the table and enjoy!
Notes
If you want to knead by hand instead of using the stand mixer, you can do so, just follow the order of ingredients before starting to knead.
