Ingredients for Christmas Tree Cookies
- 2 eggs (XL size)
- 2 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3/4 cup butter
- 8 g red food coloring (powdered)
- 1 pinch fine salt

Preparation of Christmas Tree Cookies
Weigh the flour and place it in the stand mixer’s bowl, add the cold butter cut into cubes, attach the paddle attachment, and start at speed 4 for 4 minutes (this is for sanding the flour).
Now add the sugar, the pinch of salt, and the eggs into the mixer, start at speed 4 for 5 minutes, then turn it off.
Put on latex gloves and with the help of a kitchen spatula, pour the dough onto the lightly floured pastry board, take 1/3 of the dough (leaving it white), wrap it in plastic wrap and refrigerate it.
Put the remaining dough back in the mixer, add the powdered coloring, and start at speed 2 for 4 minutes, shape the dough into a loaf, wrap in plastic wrap, and refrigerate for at least 1 hour to rest.
After resting in the fridge, take the doughs out, roll them out thinly with the rolling pin and cut out 30 trees from the red dough and 30 round balls from the white dough. Using the same shape as the balls, make a hole at the base of the tree (as you see in the photo) and insert the white dough piece in place of the red dough. Of course, re-knead and roll out the dough again until you finish both
Place the Christmas tree cookies on a baking tray with parchment paper, preheat the oven to 390°F (200°C) and once hot, bake, and cook for 12/14 minutes, then take them out, let them cool, and enjoy, they’re delicious!
