Citrus Marinated Chicken Fillets

Citrus marinated chicken fillets are a light and tasty second course, cooked without fats and you can add oil only raw if you wish, a perfect dish for healthy eating regimes. Ingredients

  • 0.88 lbs chicken breast (cut into fillets)
  • 1 lemon (juice and zest, edible peel)
  • 1 orange (juice and zest, edible peel)
  • 1 pinch fine salt
  • 1 tbsp extra virgin olive oil (optional)

Preparation of Citrus Marinated Chicken Fillets

  • Wash and dry the lemon and orange well, grate their zest and pour it into a bowl.

  • Squeeze the orange and lemon and pour the juice along with the zest, add a pinch of salt, and mix.

  • Place the chicken fillets in the bowl with citrus juice and zest, mix, cover with plastic wrap, and refrigerate for 1 hour.

  • After 1 hour, remove from the fridge, heat a non-stick pan, drain the chicken fillets from the marinade, and cook over medium heat covered for 10 minutes.

  • After 10 minutes, turn the fillets over, pour all the marinade, mix, cover, and continue cooking over medium-low heat for another 10-15 minutes. When the marinade has evaporated, the chicken fillets are ready!

  • Plate the citrus chicken fillets, garnishing, if desired, with fresh basil and the citrus zest left in the pan. If you like, you can add 1 tablespoon of extra virgin olive oil.
