The classic flatbread with lard is a traditional Romagna recipe, a true street food known and appreciated throughout Italy and the world! The preparation boasts a few simple ingredients: flour, water, lard, and salt, mixed to obtain a smooth and elastic dough that is rolled out into thin sheets and then cooked on a hot griddle! This flatbread doesn’t break, and you can also roll it; it’s very versatile and suitable for many fillings from the traditional squacquerone and ham to more modern ones with salmon and avocado or grilled vegetables with various types of sauces, but also sweet fillings like Nutella and fruit! Ingredients for Classic Flatbread with Lard
- 3 1/4 cups all-purpose flour
- 7/8 cup water (at room temperature)
- 2 1/2 oz lard
- 1 1/2 tsp fine salt
- Half tsp instant yeast for savory preparations (OPTIONAL)

Preparation of Classic Flatbread
In the stand mixer bowl, add the ingredients (after weighing them) in this order: flour, water, lard, and salt (and yeast which is optional!), insert the dough hook, lower the head of the mixer and set to speed 2 for 6 minutes.
After 6 minutes, turn off the mixer and place the dough on the pastry board, shape it into a ball, cover with plastic wrap, and let it rest for 10 minutes.
After 10 minutes, divide the dough into 4 equal parts and form balls, cover again with plastic wrap, and let them rest for 5 minutes.
After 5 minutes, roll out the flatbreads very thinly (if needed, lightly flour the pastry board) with the rolling pin.
Heat a non-stick pan on high heat on the stovetop and cook the flatbreads for 3 minutes on one side and 1 minute on the other, and voila, they’re done, ready to enjoy!
HOW TO USE THE FLATBREADS ONCE READY: heat the flatbread on the side that cooked less, fill it with whatever you like, fold it in half, and heat for 2 minutes on high flame, turning it once, then serve and enjoy!
