Ingredients for Classic Shortcrust Pastry

  • 1 egg (whole)
  • 1 egg yolk
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3/4 cup butter

Preparation of Classic Shortcrust Pastry

  • Place the ingredients into the stand mixer’s bowl in the following order: flour, sugar, whole egg, egg yolk, softened butter cut into pieces.

  • Attach the flat beater, and set the mixer to speed 6 for 3 minutes.

  • Now transfer the shortcrust pastry onto a lightly floured pastry board, compact the dough and shape it into a block, cover with plastic wrap and place in the fridge to rest for at least 3 hours before use. You can use this shortcrust pastry for tarts and cookies!

Tips

For tart baking, roll out the dough to a thickness of 1/4 inch, line a baking pan, fill with cream, chocolate, or jam, and bake at 392°F for about 30/35 minutes.

For cookies, roll out the dough to a thickness of 1/4 inch, cut them with cookie cutters as desired, bake in a preheated oven at 356°F and cook for 15/18 minutes.

If you have leftover classic shortcrust pastry dough, you can freeze it and use it as needed, just let it thaw and the pastry will be as good as fresh!
