Ingredients for the Coconut Pound Cake
- 3 eggs (XL size)
- 2 cups all-purpose flour (or the same amount of low glycemic index flour)
- 1 cup partially skimmed milk
- 1 cup coconut flour
- 1/3 cup stevia (or 3/4 cup granulated or cane sugar or erythritol)
- 3 tbsps extra virgin olive oil
- 1 packet baking powder

Preparation of the Coconut Pound Cake
In a bowl, pour the eggs, stevia (or sugar), milk, and oil, mix with a spoon for a few minutes until you get a homogeneous mixture (it really takes just a few minutes).
Now add the coconut flour and blend it with the rest of the mixture, set aside.
In a clean bowl, sift well the flour and baking powder, mix the powder mixture.
Add the powder mixture to the liquid mixture prepared before (the one with eggs, stevia, oil, etc.), mix with a clean spoon from bottom to top until you get a moderately thick mixture without lumps.
Oil and flour the pound cake pan, pour in the batter with the help of a silicone spatula, level it, and oil one side of the spatula, then make (with the oiled side) a cut in the center of the batter, this will help achieve the classic pound cake opening on the surface.
Preheat the oven to 428°F (220°C) and once hot, bake for 35 minutes, always test with a toothpick at the end of cooking because ovens are not all the same! Once the coconut pound cake is cooked, remove it from the oven and let it cool before removing it from the pan.
Once the pound cake is well cooled and you have removed it from the pan, you can serve it in slices decorated with coconut flour and fresh mint leaves if you like! Enjoy your meal!
