The coconut pound cake is a perfect dessert for breakfasts and snacks. Few and simple ingredients are the strength of this soft and fragrant cake! As you will read in the ingredients, I used stevia for sweetening, but you can easily replace it with sugar, and you will find all the indications about it! Ingredients for the coconut pound cake
- 3 eggs (size XL)
- 2 cups low glycemic index flour (or 2 cups of all-purpose flour)
- 1 cup partially skimmed milk
- 1 cup coconut flour
- 1/4 cup stevia (or 3/4 cup of granulated sugar or cane sugar or erythritol)
- 3 tbsp extra virgin olive oil
- 1 packet baking powder

Preparation of the coconut pound cake
In a bowl, pour the eggs, stevia (or sugar), milk, and oil. Stir with a spoon for a few minutes until you obtain a homogeneous mixture (just a few minutes are enough).
Now add the coconut flour and blend it with the rest of the mixture, set aside.
In a clean bowl, sift well the flour and baking powder, then mix the powder blend.
Add the powder blend to the liquid mixture prepared earlier (the one with eggs, stevia, oil, etc.), stir with a clean spoon from bottom to top until you obtain a moderately thick and lump-free mixture.
Grease and flour the pound cake mold, pour in the batter using a silicone spatula, level it, and grease one side of the spatula, then (with the greased side) make a cut in the center of the batter. This will help achieve the classic pound cake opening on the surface.
Preheat the oven to 220°F, and once heated, bake for 35 minutes. Nevertheless, always do the toothpick test at the end of baking, as ovens vary! Once the coconut pound cake is cooked, remove it from the oven and let it cool before removing it from the mold.
Once the pound cake is well cooled and removed from the mold, you can serve it in slices, decorating with coconut flour and fresh mint leaves if you like! Enjoy!
