Ingredients for the coffee plumcake

  • 3 eggs (xl size)
  • 2 2/3 cups all-purpose flour
  • 1/2 cup sugar
  • 2 1/3 tbsp water
  • 2 tbsp extra virgin olive oil
  • 2 coffee (espressos)
  • 1 packet baking powder
  • to taste extra virgin olive oil
  • to taste all-purpose flour

Preparation of the coffee plumcake

  • In a bowl, pour the eggs, sugar (leaving 1 tablespoon aside for the top), and oil. Beat with the electric whisks for 4 minutes (you will get a very foamy mixture).

  • Now add the water and coffee, and mix for 2 minutes with the electric whisks.

  • Pour the flour and baking powder into the bowl and mix with the electric whisks for 5/6 minutes until you get a dense but smooth and lump-free mixture.

  • Grease and flour a loaf pan (11.4 x 5.1 inches) and pour the prepared mixture into it, helping yourself with a silicone spatula.

  • Lightly grease the silicone spatula and make a cut lengthwise in the center of the batter (this is to create the classic central slash that the plumcake has).

  • Preheat the oven to 428°F, and once hot, sprinkle the reserved sugar on top and bake the plumcake. Bake for 40 minutes, and towards the end of cooking, do the toothpick test because every oven is different!

  • At the end of cooking, the coffee plumcake should be well browned. Once baked, take it out of the oven, let it cool, remove it from the pan, and enjoy!

Notes

You can serve the coffee plumcake plain or covered with coffee glaze.

You can add chopped nuts on top before baking.

You can add 1/3 cup of chopped dark chocolate to the batter.
