- 1 cup sliced almonds (or whole, blanched (without skins))
- 3 tbsp extra virgin olive oil
- 4 tbsp grated Parmesan cheese
- 8 leaves fresh basil
- 2 tbsp ice-cold water (cold from the fridge)
- 1 pinch fine salt
- to taste generous amount of freshly ground black pepper

Preparation of the creamy and quick almond pesto
Start by washing and thoroughly drying the basil leaves (leave them between paper towels while you prepare the rest of the ingredients).
Toast the almonds in a skillet for just 1 minute, then let them cool. Prepare and weigh the rest of the ingredients.
Place the basil (now dry), grated Parmesan, cooled almonds, the pinch of salt and a generous amount of freshly ground black pepper into the chopper.
Pulse the chopper in short bursts — 3 to 4 quick pulses are enough. Then add the oil and the ice-cold water and run it continuously for at most 30 seconds.
