These delicious and quick no-bake sweet mini cakes are made with very few ingredients and are ready in minutes. Then, just a few hours in the freezer, and you’re done! Ingredients for Delicious and Quick No-Bake Sweet Mini Cakes
- 5 oz dry cookies (whole wheat)
- 6 tbsp butter
- 1.5 oz roasted salted peanuts
- 1 pinch fine salt
- 6.5 oz cow ricotta
- 6.5 oz fresh spreadable cheese
- 1 sheet gelatin
- 3 tsp wildflower honey (if solid, melt it in a saucepan before use)
- as needed blueberries (fresh)

Steps
Finely chop the cookies with the peanuts and a pinch of salt, pour into a bowl and add the melted butter, mix until the mixture is combined.
Pour 1 and 1/2 tablespoons of mixture into each mold (you should have about 4 tablespoons left to cover the cream later), press the crumbs to the edges with your fingers until you get a uniform shell higher at the bottom and thinner at the edges, place in the freezer.
In a bowl, pour the spreadable cheese, ricotta and honey and work with the electric whisk for 1/2 minutes.
Then add the soaked, squeezed, and melted gelatin and mix for a few seconds with the electric whisk.
Take the molds from the freezer, fill each mold with 2 spoonfuls of cream, insert 3–4 blueberries in the center, and cover with the remaining crumbs, pressing lightly with a spoon.
Wrap each mold with plastic wrap and place in the freezer for at least 4 hours.
To consume, take them out of the freezer 10 minutes earlier, flip them onto a serving plate and garnish with honey and fresh blueberries.
VARIATIONS for Delicious and Quick No-Bake Sweet Mini Cakes
Instead of blueberries, you can use dark chocolate flakes or another fruit you like.
Before serving, you can decorate with melted chocolate or peanut butter.
