  • 1 pinch fine salt
  • 6.5 oz cow ricotta
  • 6.5 oz fresh spreadable cheese
  • 1 sheet gelatin
  • 3 tsp wildflower honey (if solid, melt it in a saucepan before use)
  • as needed blueberries (fresh)

  • Chopper
  • Spoon
  • Kitchen Scale
  • 4 Muffin Molds

Steps

  • Finely chop the cookies with the peanuts and a pinch of salt, pour into a bowl and add the melted butter, mix until the mixture is combined.

  • In a bowl, pour the spreadable cheese, ricotta and honey and work with the electric whisk for 1/2 minutes.

  • Then add the soaked, squeezed, and melted gelatin and mix for a few seconds with the electric whisk.

  • Take the molds from the freezer, fill each mold with 2 spoonfuls of cream, insert 3–4 blueberries in the center, and cover with the remaining crumbs, pressing lightly with a spoon.

  • Wrap each mold with plastic wrap and place in the freezer for at least 4 hours.

  • To consume, take them out of the freezer 10 minutes earlier, flip them onto a serving plate and garnish with honey and fresh blueberries.
