Ingredients for Easy and Quick Apple Pastries
- 1 sheet puff pastry (rectangular)
- 1 Royal Gala apple
- 8 oz apricot jam (or peach (I used a sugar-free one))
- 3 tablespoons chopped pistachios
- to taste ground cinnamon

Preparation of Apple Pastries
Unroll the puff pastry on the work surface, use a sharp knife to cut it into 6 equal rectangles, and place the pastry rectangles on a baking sheet with parchment paper (use any leftover scraps for decoration at the end).
Pour half a tablespoon of jam on each pastry rectangle, and spread it using the back of the spoon.
Peel the apple, remove the cores and use a sharp knife to slice it thinly, place 3 or 4 slices on top of each pastry rectangle (where you already put the jam).
Cover all the apples with the remaining jam, sprinkle the chopped pistachios on top, and decorate with any leftover puff pastry scraps.
Preheat the oven to 428°F, once hot, bake and cook for 20 minutes, once baked remove the pastries, sprinkle with ground cinnamon (use as much as you like, I used a lot!) and serve, excellent both hot and cold!
Notes
You can replace chopped pistachios with chopped walnuts, hazelnuts, or almonds.
You can also add some dark chocolate chips.
Instead of cinnamon, you can sprinkle powdered sugar or powdered stevia.
