I don’t know about you, but in summer I have zero desire to cook, so I often make this chicken salad, a summer recipe that’s very easy. I personally find it convenient because it can be prepared in advance and eaten when needed, and if you’re going on a picnic, it’s the perfect dish to bring! Ingredients
- 10 oz Chicken breast (in slices)
- 1 Cucumber
- 5 Pickled gherkins
- 5 oz Canned yellow corn kernels
- 1 Red Tropea onion
- 5 oz Cooked ham (two thick slices)
- 2 tbsps Tartar sauce
- 2 tsps Extra virgin olive oil
- 1 tsp Fine salt
- 1 tsp Whole peppercorns (freshly ground (optional, according to your taste))
- 1 tsp Aromatic salt

Preparation
Heat a grill pan well over high flame, sprinkle the aromatic salt on the pan and place the chicken breast slices on it, cook for 8 minutes, turning once halfway. Let cool.
Once the chicken breast is cool, cut it into strips and then into squares and place them in a bowl.
Peel the cucumber, cut it in half lengthwise and slice thinly, add to the chicken.
Peel and thinly slice the Tropea onion, separate the rings and add them to the bowl with chicken and cucumber.
Now drain the corn and pickled gherkins well, add the corn as is, and chop the gherkins before adding them.
Cut the cooked ham into strips and then into small squares and add to the bowl with the rest of the ingredients.
Now add the tartar sauce, oil, salt, and pepper (optional) and mix well to combine all the ingredients, cover with plastic wrap and place in the fridge for at least 1 hour before serving so that it is nice and cool when eating! Before serving, you can garnish with a fresh basil leaf if you like.
TIPS & ALTERNATIVES
To make this chicken salad even lighter, replace the 2 tablespoons of tartar sauce with 2 tablespoons of plain yogurt (soy or regular) and add a mixed chop of basil, thyme, and the grated zest of a lime. You’ll taste a fresh, light, and delicious flavor! You can also use leftover roast chicken breast to make this recipe!
