Ingredients for Easy Pasta and Zucchini

  • 17 oz zucchini (weighed after cleaning)
  • 4 oz pasta
  • 4 oz yellow onion (weighed after cleaning)
  • 3 tbsp extra virgin olive oil
  • to taste fine salt

Preparation of Easy Pasta and Zucchini

  • Clean the onion and chop it very finely, place it in a non-stick pan with the oil and a pinch of salt, set on low heat and stir occasionally.

  • Meanwhile, as the onion slowly sautes, clean the zucchini and cut them into small cubes. When the onion is golden, add the zucchini to the pan, adjust the salt, stir occasionally, and let it cook for 15/20 minutes.

  • While the zucchini is cooking, put the water on the stove, salt it, and when it boils, add the pasta. Drain it well al dente and pour it into the pan with the zucchini (which will be cooked by now), mix for 2/3 minutes over medium heat, stirring continuously, plate and serve this easy and delicious pasta and zucchini hot and steaming!
