Fresh Pasta Without Eggs

Fresh pasta without eggs is a great alternative for those who are vegan or who love pasta like lasagna or ravioli but cannot eat it because of the eggs. I made two versions: one whole wheat and one semolina. These are basic recipes that you can use to make lasagna, stuffed pasta, or tagliatelle. At the end of the article, you’ll find some tricks and useful tips.

  • 8.8 oz semolina flour
  • 3/8 cup water
  • 1/4 tsp fine salt

Preparation of Fresh Pasta Without Eggs

  • Weigh the ingredients and then in a bowl mix semolina, water, and salt, with a quick stir.

  • When the dough becomes workable, turn it out onto a floured work surface and knead it until you obtain a smooth and compact dough ball (you can also use a kitchen robot to knead if you don’t want to knead by hand).

  • Once kneaded, let it rest covered with plastic wrap outside the fridge for about 1 hour.

  • After an hour, take the fresh pasta without eggs again, work it for a few minutes and roll it out thinly either with a rolling pin or with a pasta machine (I used the latter until bringing the sheet to position 2) and voilà, the fresh pasta without eggs is ready to be used!

  • Let the pasta dry a bit before using it and after rolling it out (just 30 minutes of rest is enough). Once ready, this sheet can be stored for a long time if dried (I placed it on a tray alternating the sheet with sheets of parchment paper). Once dried, you can use this sheet to make lasagna, while when it’s still fresh, it’s great for making: cannelloni, tagliatelle, tortellini, and ravioli, great as a base for lasagna and vegan dishes.
