Fresh Tuna Sauce

The fresh tuna sauce has become a staple in our house, we prepare it at least once a week and it is excellent for dressing pasta, risotto, and homemade gnocchi but it also becomes a great second course accompanied by bread for dipping! You can prepare it in a few minutes and enjoy it. You can use either fresh tuna or frozen tuna (of course, defrosted first). But now, I won’t say more, go try it and let me know, I’m sure you’ll be licking your lips!

Ingredients for Fresh Tuna Sauce

  • 1 slice fresh tuna (7.8 oz in weight (if frozen, the weight is intended after defrosting))
  • 2 cloves red garlic
  • 2 tbsps extra virgin olive oil
  • 700 g tomato sauce
  • 1 bunch fresh parsley
  • 1/2 cup water
  • 1 pinch fine salt
  • as needed black peppercorns (freshly ground)

Preparation of Fresh Tuna Sauce

  • Clean and finely chop the garlic cloves with a knife, heat the oil in a pot and add the garlic, stir and let it become golden over low heat, then turn off the heat and prepare the tuna.

  • Cut the fresh tuna into strips and then cubes, place it in the pot, lightly salt and return to medium heat, stirring until the tuna changes color and becomes lighter.

  • At this point, add the tomato sauce, salt, pepper, and freshly chopped parsley (a generous amount) to the pot, stir, cover, and cook over low heat for 20 minutes, stirring occasionally.

  • NB: If using frozen tuna, let it defrost completely before cooking, then proceed with the recipe as written above.

TIPS

You can use this fresh tuna sauce to dress pasta, rice, and gnocchi.

You can also use this sauce as a second course accompanied by fresh bread.
