Ingredients for Grandma’s Chicken Salad
- 9 oz chicken breast (sliced thin)
- 1 1/4 cups cucumbers (weighed already cleaned)
- 1/2 cup red Tropea onion (weighed already cleaned)
- 1 cup red bell pepper (weighed already cleaned)
- 1.5 oz Grana Padano DOP (sliced into flakes)
- 1 tbsp pickled capers
- 2 tbsps extra virgin olive oil
- 1 tbsp chopped parsley
- 1 pinch fine salt

Preparation of Grandma’s Chicken Salad
Start by heating the cast iron griddle on high heat. When it’s very hot, cook the chicken breast for 4-5 minutes on each side, turning halfway through with kitchen tongs. Once cooked, place it on a plate to cool.
While the chicken cools, prepare the dressing: clean, wash, and dry the cucumber, cut it in half lengthwise, then into thin slices, and place it in a bowl.
Add the finely chopped onion and capers to the bowl.
Clean, wash, and dry the bell pepper, cut it into strips and pieces, and add it to the bowl too.
Slice the Grana into flakes and chop the parsley, leaving them aside for now.
Cut the cooled chicken breast into small pieces and add it to the bowl with parsley and Grana flakes.
Add a pinch of salt, mix well with two spoons, and enjoy! If you like, you can also let it rest in the fridge for half an hour before eating! Bon Appetit!
