Preparation of Grandma’s Potato Salad
To start, peel the potatoes and wash them, drain them well, then cut them in half lengthwise and cut each half into 4 or 6 large pieces (depending on how big they are), place them in a pot and cover with plenty of water and a pinch of coarse salt, set over high heat, stir and cook for 20 minutes from when it starts to boil, once cooked, drain them and place in a bowl.
While the potatoes are boiling, prepare the dressing: finely chop garlic and parsley and place them in a small bowl, add a pinch of fine salt, oil, and vinegar and stir with a spoon until you get a thick, fragrant emulsion.
Pour the previously prepared dressing over the boiled potatoes, mix well with two spoons, and serve, enjoy your meal! This grandma’s potato salad is delicious both hot and cold!
