Ingredients for Grandma’s Potato Salad
- 2 lbs potatoes (weighed already peeled)
- 4 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 2 cloves garlic
- 1 bunch parsley (fresh)
- to taste fine salt
- 12 cups water
- 1 pinch coarse salt

Preparation of Grandma’s Potato Salad
To begin, peel the potatoes and wash them, drain them well, then cut them in half lengthwise and cut each half into 4 or 6 large pieces (depending on their size), place them inside a pot, cover with plenty of water and a pinch of coarse salt, bring to a boil over high heat, stir, and cook for 20 minutes from when it starts boiling, once cooked, drain them and place them in a bowl.
Meanwhile, while the potatoes are boiling, prepare the dressing: finely chop the garlic and parsley and place them in a small bowl, add a pinch of fine salt, the oil, and vinegar, and mix with a teaspoon until you obtain a thick and fragrant emulsion.
Pour the previously prepared dressing over the boiled potatoes, mix well with two spoons, and serve, enjoy your meal! This grandma’s potato salad is delicious both hot and cold!
