Ingredients for Grandma’s Tuna Spaghetti

  • 5.5 oz spaghetti
  • 2 tablespoons sofrito (mixed)
  • 2 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons pickled capers (well drained)
  • 6 anchovies in oil
  • 6.3 oz tuna in oil (weighed drained)
  • 1 pinch fine salt
  • to taste mixed peppercorns (freshly ground)
  • to taste dried chili pepper (abundant if you like)
  • 1 bunch parsley (fresh)
  • to taste coarse salt (for pasta cooking water)
  • to taste water (for cooking pasta, abundant)

Preparation of Grandma’s Tuna Spaghetti

  • Start by bringing plenty of water to a boil in the pot and salt it, medium heat.

  • In a frying pan, add the oil, pepper, chili pepper, the sofrito, and the cleaned and crushed garlic cloves. Put on high heat, stirring continuously for 5 minutes, then lower the heat to the minimum and prepare the rest of the sauce.

  • Finely chop the capers, anchovies, and half of the parsley (of course, washed and cleaned). Add everything to the pan, stir, and cook for two minutes.

  • Now that the water is boiling, add the spaghetti and cook, stirring.

  • Then add the roughly flaked tuna to the pan and a pinch of salt, pour a ladle of pasta cooking water and mix with a wooden spoon, cooking on high heat for 2/3 minutes, then turn off the heat.

  • Drain the spaghetti al dente and add them to the pan with the sauce, mix over low heat and serve hot, maybe with a generous sprinkle of fresh chopped parsley. Enjoy your meal with grandma’s tuna spaghetti!

While the pasta is boiling, set aside in a saucepan 2/3 ladles of water (apart from that used for the sauce cooking), it will be useful before serving if the sauce dries too much while mixing!
