Ingredients for Herb-Flavored Chicken Nuggets
- 1.1 lbs Chicken breast
- Juice of 1 lemon
- 1 tbsp Extra virgin olive oil (for marinating)
- 2 tbsp Extra virgin olive oil (to use before baking)
- to taste Fine salt
- 2.82 oz Breadcrumbs
- 2 tbsp Roast mix (with rosemary, sage, bay leaf, onion, marjoram, thyme.)

Preparation of Herb-Flavored Chicken Nuggets
Clean the chicken breast, remove any small bones, cut it first into strips and then into bites of the same size (no need to measure them to the exact inch!).
In a bowl (I recommend using a glass one), put the lemon juice, 1 tablespoon of oil, and a pinch of salt. Mix and add the chicken bites, stir well, cover with plastic wrap, and let rest in the fridge for 30 minutes.
After resting in the fridge, take the bites, drain them from the marinade, coat them with the breading (prepared with breadcrumbs, a pinch of salt, and the herbs listed in the ingredients), press and adhere the breading well to the chicken.
Place all the chicken nuggets on a baking sheet with parchment paper, drizzle with a bit of oil, and bake in a preheated oven (static mode) at 392°F and cook for 20 minutes, then 4 minutes on grill mode.
And voilà, now the herb-flavored chicken nuggets are ready to be enjoyed hot!
VARIATIONS AND TIPS
You can serve the chicken nuggets as they are or with sauces like mayonnaise, ketchup, or you can prepare a sauce with plain Greek yogurt, oil, salt, and pepper (light and full of flavor). You can also serve them drizzled with a very delicious sauce made with 1 teaspoon of honey, 3 tablespoons of lime juice, and a pinch of salt. They can also be accompanied by a tasty mixed salad.
