- 1 lb chicken breast
- 2 tsps extra virgin olive oil
- 6 tbsps milk
- 2 tbsps Grana Padano cheese, grated (or another grated cheese)
- 1 tsp fine salt
- 1 tsp black pepper (freshly ground)
- 1 tsp rosemary (dried)
- 1/2 cup breadcrumbs (for breading)
- 2 tbsps extra virgin olive oil (to be distributed on top before cooking)

Steps
Start by putting the chicken breast into the chopper (if it doesn’t fit all at once, do it in two batches), add salt, pepper, rosemary, oil, and cheese, and let the chopper run for 2/3 minutes until a homogeneous mixture is formed, which you will then place in a bowl.
Now divide the mixture into 4 equal parts (use gloves to handle the meat), form each part into a ball, then flatten it to a thickness of about 1/5 inch.
Coat each cutlet with breadcrumbs, ensuring it adheres all over (it will stick due to the albumin), place them on a piece of parchment paper, wrap them gently, and cover with plastic wrap, place in the fridge for at least 30 minutes before cooking.
After resting in the fridge, take out the chicken cutlets, place a sheet of perforated parchment paper in the air fryer basket, lay the cutlets on top, and pour over the 2 tablespoons of oil as per the recipe.
Insert the basket, set the air fryer to 375°F for 15 minutes, cook, turning once halfway through, and then enjoy them in all their goodness!
Notes
You can cook the homemade chicken cutlets without eggs in the oven at 350°F for 20 minutes, or you can also cook them in a non-stick pan with a drizzle of oil, or alternatively, fry them.
