Ingredients for homemade chicken cutlets without eggs

  • 15.5 oz chicken breast
  • 2 tsp extra virgin olive oil
  • 6 tbsp milk
  • 2 tbsp grated Grana Padano (or another hard grated cheese)
  • 0.33 tsp fine salt
  • 0.33 tsp black pepper (freshly ground)
  • 1 tsp dried rosemary
  • 0.5 cup breadcrumbs (for breading)
  • 2 tbsp extra virgin olive oil (to drizzle on top before cooking)

Steps

  • Start by putting the chicken breast in the chopper (if it doesn’t all fit, do it in two batches). Add salt, pepper, rosemary, oil, cheese and milk and run the chopper for 2-3 minutes until you obtain a homogeneous mixture, then transfer it to a bowl.

  • Now divide the mixture into 4 equal parts (use gloves to handle the meat). Shape each portion into a ball and then flatten it to a thickness of about 0.2 in (approximately 1/5 inch).

  • Coat each cutlet with the breadcrumbs, pressing so that they adhere all around (they will stick due to the albumin). Place them on a piece of parchment paper, close them gently wrapped and cover with plastic wrap. Refrigerate for at least 30 minutes before cooking.

  • After resting in the fridge, take the chicken cutlets, place a sheet of perforated parchment paper in the air fryer basket, arrange the cutlets on it and drizzle the two tablespoons of olive oil indicated in the recipe over them.

  • Insert the basket and set the air fryer to 190°C (374°F) for 15 minutes. Cook, turning once halfway through, then enjoy them in all their goodness!

Notes

You can bake the homemade chicken cutlets without eggs in the oven at 180°C (356°F) for 20 minutes. You can also cook them in a nonstick pan with a drizzle of oil, or alternatively fry them.

Served with a good side dish they make a complete meal.
