  • 3 tbsps extra virgin olive oil
  • 0.21 oz fresh yeast (or 2 g dry)

  • Kitchen Scale
  • Mixing Bowl

Steps to make homemade pizza dough

  • Start by placing in the mixer bowl in the following order: flour, sugar, yeast, water (leaving aside one tablespoon) and oil, mount the dough hook and set the mixer to speed 2, let it work for 10 minutes, then turn it off, cover with a dishcloth and let it rest for 10 minutes as covered.

  • After the covered rest, turn on the mixer again at speed 2, add the salt and the water set aside and let it go for 5 minutes, then turn it off, transfer the dough (which will be well kneaded) onto the lightly floured board and shape it into a ball, then place the dough in a bowl covered with plastic wrap, leave it in a closed and dark place, let it rise until doubled in volume (it will take about 4 hours, times depend a lot on external temperatures).

  • Once the dough has doubled in volume, give it a round of folds in the bowl and cover again with plastic wrap to rise for 1 hour.

  • After 1 hour, turn the dough onto a well-oiled rectangular baking sheet if you want a tall and fluffy pizza, otherwise if you want a thinner pizza, divide the dough into two sheets, spread the dough with oiled hands just a bit, then let the dough rest to relax (30 minutes is enough), then spread again with your hands to the edges (by now it will be very pliable), put the sheet with the dough to rise in the turned-off and closed oven for 1 hour.

  • After 1 hour, remove the sheet from the oven, preheat it to 482°F, when it’s very hot, season the pizza as you like (with tomato, white, etc.) and bake, cook for 30 minutes always checking the baking because every oven is different from another, in the end, the pizza must be very well browned at the edges, eat it hot or cold and you’ll taste how delicious it is! Enjoy your meal!

  • For those who do not use the mixer, just follow the order of inserting the ingredients and then knead by hand for at least 20 minutes, then after creating the dough, the procedure to follow is the same as above!

Advice

The all-purpose flour I use in this recipe must have at least 13 g of protein (it helps give more elasticity and strength to the dough), this information can be found on the packaging of every type of flour.
