Hunter-Style Fennel

The hunter-style fennel is a hearty and flavorful side dish, perfect to accompany many main meat dishes but also a nice platter of cured meats and cheeses, or even a nice omelet or fried eggs. The ingredients are varied, but I assure you the preparation is very easy and in the end, you can even do the scarpetta, so prepare plenty of bread! With the base sauce, instead of fennel, you can obviously cook the classic hunter-style rabbit or chicken! But enough chatter now, go try the recipe!

Ingredients for hunter-style fennel

  • 1.1 lbs fennel (weighed already cleaned)
  • 1 cup peeled tomatoes
  • 6.3 oz Taggiasca olives (weighed already drained)
  • 5 tbsps extra virgin olive oil
  • 2 celery stalks
  • 2 carrots (medium size)
  • 3 cloves red garlic
  • 1 golden onion
  • 1 tsp sage (fresh or dried)
  • 1 tsp rosemary (fresh or dried)
  • to taste mixed peppercorns (freshly ground, abundant)
  • 1 glass water (or light white wine if preferred)
  • to taste salt

Preparation of hunter-style fennel

  • Clean the celery stalks from the strings and the carrots from the ends, wash them, dry them, and cut them first into strips and then into small cubes, pour them into the skillet.

  • Add the 3 whole but cleaned garlic cloves and the finely chopped onion to the skillet.

  • Now add the oil, pepper, rosemary, and sage, mix and set on medium heat, stirring occasionally, and let it sauté for 5/6 minutes.

  • Now add the olives, slightly crushed peeled tomatoes, and water, lightly salt and let it cook at low heat.

  • Meanwhile, clean and wash the fennel, and cut them coarsely into large pieces, add them to the skillet, and cook for another 15/20 minutes on medium heat, stirring occasionally.

  • At the end of cooking, the hunter-style fennel should have a thick but not liquid sauce, a well-reduced sauce, once ready serve it hot at the table and enjoy! In the summer, they are also delicious cold!

Tips

At the end of cooking, before serving, you can sprinkle with freshly ground pepper!
